Applications: Use for Anti-retrogradation effect, Use for preventing Protein Denaturation during heat treatment, Use for Anti-bacteria effect, Use for aeration properties, Use as an Emulsifier for Oil/Fat in Water or Water in Oil/Fat. Prevent Water or Oil – Crystallization and Separation, Use as a Stabilizer for maintaining small particle size during heat treatment, Use as a Lubricant between different phases or systems present in food, Use for improving Freezing and Heating properties of Oil/Fat or Water, Use for Solubilization or Dispersion.
