Adatepe Olive Oil is produced only by traditional crushing and extraction methods. Our mill, left for some time was recently restored to EU hygene standards.

Organically grown olives, hand picked from our family estate are brought to our mill within 12 hours. They are crushed in granite stone mills and start releasing their first golden drops of olive oil even before being extracted.

This first olive oil is called "sızma" in Turkish and believed to be the real elixir of God.

The second step is to place the olive mash on to mats and extract through hydraulic press. No heat, even hot water should be involved in this process to maintain "cold pressing" and also "first pressing."

The olive oil, together with the black water is taken into decantation pools where the olive oil is decanted naturally due to gravity.

Then the olive oil is kept in earthenware jars and stored in cool rooms away from sunlight to avoid possible deterioration.
