"DOLMEN": Obtained from heat-treated whole sheep’s milk, with uncooked white interior, soft and compact, with mild, aromatic taste. The rind is smooth and thin, of brown colour. Excellent as a table cheese.
Maturing: 30 days minimum;
Ingredients: Sheep’s milk, calf rennet, salt, milk ferments;
Shelf-life: 12 months at 8-10 °C
Nutrition info (average values per 100 gr.): 395 Kcal - 1639 Kj, Proteins 26,24 %, Fat 32,23 %
